On any metal grill.
Rusty, stainless or anything!
Tastes better than any other way.

Take the grid off you bbq before you leave, or goto canadian tire and buy a bbq grid. Put it over your coals with a little flame left, and cook away. Can do it riverside, in a pit, doesn't matter. Than let it cool, and pack it back up. Just like the bbq :)

I'll share my favourite camping breakfast recipe. Be sure to follow directions carefully.

Take one beer, add Clamato. Mix well and serve.

i)wait until the flames are down, and you've just got the hot coals
ii) wrap potatoes in foil, and place them in the coals
iii) coat the steak in steak spice, surround it w/ chopped onions and garlic, and wrap it in tin foil
iv)place over pit, flipping every few mins until it's done well enough for you
v) remove potatoes when done
vi) eat awesome meal

This is only necessary if your beer (or your clamato) sucks.

potatos, onions, and a chunk of ham and try carrots on an open fire, wait till they go black, knock the burnt stuff off and they taste like chestnuts at x-mass. the fish make up the rest of the meal.

for something different i did
this one for camping
got some frozen prawns & took the tails off at home
fried up some scallops. added some lobster meat
put prawns lobster & scallops in tin foil.
add lots of lemon pepper & butter with a little garlic
wrap tin foil in wet newspaper.then do a wrap of tin foil over newspaper
throw in the freezer. the wet newspaper keeps it from burning.
chuck it on your fire grate or on the barb.q. for a few minutes
open it up & enjoy.

Not mine but i have tryed it camping

Old School Beefy Mac
Macaroni - noodles cooked as per directions on the package. The more the merrier. Skinny spaghetti thats cut short, or just about any pasta noodle will do. I like the tiny mac noodles.

Brown 1lb. ground meat in a separate bowl/pan add:

dried onion, about one table spoon,

season salt - about one tea spoon

one can of V8 - the larger size can

1/4 cup ketchup IF you like it with a hint of sweet, OR if the onion is too strong for your taste buds. OR add a small can of stewed tomatoes.

Salt and pepper to taste.

Mix the noodles in with the meat after cooking, and serve in a bowl.

Add some cheddar cheese, grated or sliced if you want.

I eat better camping than I do at home.... Don't use the stove, campfire only, everythings better over a fire.
I like this thread, always looking for new ideas!!

a few regular favorites of mine
*raw shell-on jumbo tiger prawns (biggest size I can find), some garlic and butter, stickem on a skewer.
*dry rubbed chicken (breasts with back attached, helps keeps moist)
*ribs (pre-packaged, makes it super easy)
*Potatoes, onions, carrots, garlic, butter, wrapped in tinfoil.
*Maple glazed salmon
*Steak
*Pork tenderloin, cut up and put on skewers, seasoned with whatever I feel like
* I don't usually eat hot dogs, but i like to take a few spolombo sausages, turkey apple is good, as is another one (i can't remember the name)
*corn on the cob, soaked in salt water first.

Kind of a hassle, but I love the sandwich makers. I use flavored garlic spread for most, regular margarine for the sweet ones. A few fav's:
*pizza sauce, mushrooms, peppers, mozza, ham and pepperoni
*peanut butter and jam
*plain grilled cheese
*apple pie filling, cinnamon
*my absolute favorite: roast beef, mushrooms, green peppers, jalapeno gouda, and chipotle ranch sauce

I like to cook steak in one of those things made for toasting bread. Not sure what its called. They hold 4 pieces of bread, has 2 sides of metal grid that fold to hold it together. Just put steak in there, close it up, then easy to flip as necessary or move around over a fire without sticking all the time, because its not sticking to a grill

take with you in cooler all together in a large ziploc, 2 cups each chopped onion, diced carrots, diced potatoes, chopped celery. freeze a 500ml container of cream (18% mf coffee cream will do nice). On the campfire in a large pot add the vegetables and cover with water, a little more than will just cover them. add salt, pepper and 2 cubes of chicken oxo, cook until vegetables are just about done, then add the cream. when the pot is almost boiling again, add a bunch of cubed boneless walleye or pike, or whatever you caught. let the fish cook for about 5 min and enjoy

If your going fishing.....make sure the lake you go to has a legal catch limit and dip fish in egg then crush some corn flakes and roll egged fish in corn flakes and fry....add lowrys seasoning salt when in the pan frying.

what the best way to cook a steak over a fire pit?

This might sound crazy/a little cave man'ish, but a steak cooked on a hot dog stick over a fire is fantastic. I think the way it hangs off the stick on either side stretches the meat out and maybe tenderizes it a bit? Whatever the cause, they turn out incredibly tender and juicy. It's a hell of alot harder to tell when the thing is done properly though than on a grill.

One of the best ever camping meals I've had was a Potjiekos (http://en.wikipedia.org/wiki/Potjiekos) which is basically a South African stew cooked slowly over a fire. Those South Africans really understand a good braai.

The other memorable meal was olive oil, chilli marinated baby octopus and prawns grilled on a hot plate on the beach in Australia. Baby octopus are harder to get here but calamari is a good substitute. Or fresh mud crab cooked right over hot coals, dungeness crab is a pretty good substitute too.
