View Full Version : 25lbs of Elk Treats
Well I got bored yesterday, and I decided that I should make some Garlic coil. Started mixing the Elk up at 9 am and had it in smoker by 11 am. I made 8lbs with Cheese and 6lbs of with out. The rest I made into large casing so the Fiance can slice it for sandwiches and frying. Smoked it in my Bradley smoker with Crown Royal pucks. Turned out really well dont think that is is going to last long. Going to have to make some more out of my Moose also I guess

How do you like those crown royal pucks? My kids got me some to use in my smoker but I haven't tried them out yet. BTW that sausage looks very tasty... :D

They work awesome, they give the sausage a little bit of a bite like the whiskey does when you drink it.

Always love cheddar smokies. Did a whole mule buck into them one year. Processing was expensive but worth it.

Gonna try to make jalopeno/ cheese smokies this year. Is there a certain type of cheese to use for these? I've heard velvetta but was wondering what others use.

I just used bulk no name mild cheddar in these and it turned out awesome. just make sure you cube it small enough to get through stuffer tube and you should be good to go. I used one pound of cheese to 8lbs of meat and it worked well so far

looks really good. i have 35 pounds of pepperoni and 40 pounds of jerky to smoke tomorrow and monday hope mine looks as good as that when it done. Im not adding any pork or beef fat just deer wonder how itll turn out

I totally mis-read the title, and only opened the thread to see what the heck someone would do with 25 lbs of Elk teats! Needless to say, I was a little confused as to why they were being used to make sausage! LOL.

they will be dry really dry the pork adds some moisture into the meat but they should turn out ok still good luck
