I went and bought a Cabelas 3/4 hp meat grinder with all the attachments etc etc

Now I have to sit and stare at 50lbs of frozen deer meat until it thaws.....

Im just not cut out for these silly waiting games. C'mon venison, thaw out for crying out loud!!! Im standing here with the pepper and garlic powder at the ready!

I got this brainwave about one hour ago. Bought it, cleaned it, did a dry run, ready to go.

I forgot casings!!!!!! Son of a......

Oh well. I will make deer burgers.

Just gotta find that K-Tel patty stacker in the crawlspace........

Just in case you are not aware, don't let it thaw all the way!
That's when it will start to go bad, better to grind it when it id half froze!:)

Oh great. I take a grinder apart, fiddle with the blades with no problem, then cut my finger on a box of chocolates....... I need a bandaid

first time i bought spices was first of many trip to the spice store it never seems to end. got spices here now never heard of before good luck,they taste so much better home made noing whats in them.

Ive got a chicken here in the fridge. Im gonna grind it up and see how this works.

I ground up some chocolate and that was pretty easy.

It was a chocolate bunny. I put him in feet first so I could see the expression on his face, but it didnt seem to phase him. That was one tough rabbit.

The neibor with the cat was just here. I signed/witnessedher last will and testament. She's younger than me! Her cat is never out. He needs some sun as he is kinda pale.......

Big blocks of meat take quite awhile to thaw out....and like cat says processing when the meat still has some ice crystals in is best...especially when you start mixing fatty pork in for sausages.

Myself and a couple friends are making 75lbs of sausage this weekend as well!

Me and my bro Just made 100 lbs of of sausage on Tuesday took 2 25lbs bags of deer meat saturday afternoon was still a little frozen in the middle Tuesday morning when we started. Enjoy the wait

If grinding that rabbit's feet didn't work, you may to try waterboard him. They are tough but they can be cracked.

"Un.Thaw" is that even a word. If it is I think it means freeze, which is what cops say when they can't think of "STOP!".

I got 4 pounds of Manitoba Walleye fillets almost thawed for a family fish fry tomorrow.... that would be good ground up into walleye burgers!

And helps keep the temp in the safe zone.

Made up about 300 lbs of uncooked deer sausage...another 40 or so of bacon and about 30 lbs of beer sausage this year.

If you think that grinder is driving you nuts just wait till you are making fermented sausage like beer sausage.

Oh the joy of making sure there are no air pockets in the casing then trying to balance temperature, humidity, fermenting and drying time...the process takes WEEKS!!!!
Weeks of checking the temperature and humidity every few hours because the set up you are using is twitchy...weeks of turning the casings...draining the condensate and weeks of worrying it will all be a big waste of time.

All the while you are secure in the knowledge that missing the mark by just a teeny tiny bit can spoil the works or send you to hospital.

My first attempt at that was this year and the results were great but I'm going to build a much better fermentation and drying chamber before I put myself through that again.

Hmmmm... anyone else suddenly hungry?

I did my own butchering this season, steaks and ground meat, jerky and roasts. I cant beleive I used to pay good good money for someone to do it for me :( idiot. Im addicted to making my own jerky now. I make about 10lbs of beef a week. I cant wait till I get my OWN grinder and delve into the sticks and sausages mmmmm, I can taste it now :D

Sounded pretty stressful there... maybe he needs a bit more time to re-coop?
Or...the band-aid wasn't enough and he's been stuck at a medi-center waiting for stitches and meds to fix the chocolate poisoning...
Good news is...that meat should be thawed by now... and he'll be able to get back to "enjoying" that new meat grinder PDQ.

Straight raw pork salt and seasoning and of course it was hung to cure. He had a small 'paddle' that he had made to 'aerate' the tubes of salami. it had several very sharp nails in it and he spanked his salami with it to let the air out. I can't believe I just typed that. Oh well I can't find my whiteout to correct it now.:)

My other half and I take advantage of filling a few supplement doe tags and use one or two deer all for ground. The versatility of ground meat is excellent. Soups, bbq burgers, lassagna, tacos, the list is endless.

In fact...I bet I'd be really really good at spanking the salami.....

Good idea thanks...I was using a sanitized needle to poke holes and deflate the pockets cause thats what the recipe I found suggested but it was a bit of a PITA.
Must of worked though...had some again last night and I'm still vertical.

Wow! it would be a PITA using a needle. It would take forever and heat the meat from all the handling.

He had about about 20 finishing nails spaced out on a 3X3 area on a paddle.

Made my first bunch of deer sausages a couple months back and was pretty impressed with myself. I found the cases to be stinky :sick:but they turned out great!
What ru using for seasonings? Any sausage 'recipes' to share?

My wife gave me a grinder for my Bday this year and I use it all the time! I learned that you should cut out ALL silverskin BEFORE freezing as it sucks when you want to make sausage and still need to cut all that out before you can begin. Little lessons that you learn each year lol. Have fun and enjoy! -SQK

Gotta get me an electric grinder. Just did 6 pounds of moose (the last two packs in the freezer from 2010) with a #5 manual grinder...damn silver skin - the last pack was full of it... oh well, jalapeno cheddar summer sausage will be ready tomorrow night!!! Now, time for a nightcap! Whiskey, tequila, or one of each?

Speaking of sausage, here's a couple pics from a few weeks ago making some garlic sausage. I think its about 70 pounds in the smoker (which was made from some culvert and a tiger torch). Mmmmmmmmm, sausage!!!
