Id go with a pinch of drum with zigzag blues .but with rainbow you might have to use vogue. ha ha. i just salt and pepper them then smoke with pecan wood chips in my barby smoker 190 to 200 degrees time depends on you, thats it or smoke half hour then dry it in smoker or dehydrator makes good jerky.

we soak them in a brine overnight, salt, pepper, garlic and bay leaves and smoke them the next day, awesome fish to smoke.

Keep it simple eh? Most of the recipes on the net seem to have quite a few ingredients in comparison.
