Does anyone have a good recipe for snowshoe hares? When I try to cook them, they end up tasting like a ball of rubber bands. Thanks.

you need a slow cooker and some of your Favorited BBQ sauce.:)

I like rabbit with simple mushroom soup from a can.

Cut the hare in quarters
Wash and soak for an hour in salt water
drain and put in a roasting pan (not too tightly tigether )
Add carrot pieces and onion slices
half pound of diced bacon or salt pork on top
season with pepper and garlic
Cover tightly in an oven at 425 for 30 minutes
reduce heat to 200 for 4 hours (turn parts at 2 hours )
uncover for last half hour
Eat and you will never do them any other way!

bottle em with onions fat back and your favorite spices not bad and have it at hand quick great meal.

Google jugged hare...it's a ton of work but pretty darned good!

Hares have almost no fat at all in the muscle, you must do something to keep them moist.

I find that they tenderize quite quickly when cooked, 45 minutes and the meat starts to fall off the bone. If you really want them fried, try pre-boiling first, then flour and fry just for color.

I had my first meal of rabbits for this winter just last night, Damn they are Good!:tongue0017:

Google Rappi pie. A good friend of mine made it for us after we supplied him with rabbits from southern Alberta. He is from Nova Scotia and he could not believe the size out here as compared to back "home". Where it calls for chicken just insert precooked bunny. It is very tasty.

Bunny Balls

Debone and grind

For each lb of ground bunny add 1 whole egg-1/4 cup of oatmeal. 1tsp salt-1/2 tsp ground pepper-1/4 tsp ground sage. Mix well and form into meatballs slightly smaller than golfball size. Should get 16-18 balls to the lb.
Brown quickly in hot skillet with cooking oil- transfer to small corning ware casserole dish and pour over 1 tin mushroom soup mixed with 3/4 tin of milk

bake in 350F oven for 50 minutes.

Serve over rice or mashed potatoes.

Of course! Grinding the meat would help remedy the "tough" snowshoe hares up here. I'm gonna try that with the next one I get. I should have thought of that, but this is exactly why I keep coming here.

So far any chicken recipe I've tried works equally well with rabbit/hare
