Monster for a sucker. Great job. Iv seen some crazy huge quillbacks in the 10-15lb range. Just never targeted them. Prob try sometime soon.

ill probably smoke it. I tried to filet it and I don't know how to get all the bones out if it. I was originally going to fry it so I took the skin off. I like the skin on better when smoking. ya.... any tips??

is this a quill back? I don't know how to tell the species
looks like white sucker to me. But I never seen one that big so it may be something else. Wayne is an expert I guess so I would trust his word on that one.
was just browsing different sucker pictures and indeed it does look way more like silver redhorse then white sucker.

Maybe try pickling? Worst case you have some bait anyways. I wouldn't smoke it with the skin off.

Mmmm.. poor mans salmon. Canned sucker is very good. It does require a canning process but worth it. i knew an older lady that canned suckers every year during the spring run. Tasted like canned salmon. The bones go soft in the canning process, like salmon, so no need to remove the bones from a fillet.
If you want to try frying, cut into steaks, leaving the skin on instead of filleting. When the fish is cooked the bones might be easier to remove.

Thats an awesome fish but i think id give it a second thought before eating it if ya got it under the beverly bridge

it makes no difference if caught in devon or ft sask, the fish travel and live in all types of water conditions, and the river is a lot cleaner then what people believe, however high amounts of natural mercury levels deter me from keeping any fish in alberta from any lake, but if I did, it would be from the NSR before any other lakes!
but ya, I do not keep any alberta fish.... However, that Sucker is a Hog of a sucker, Probably the second biggest NSR sucker ive seen, But ive heard they get into the 15lb range

Records are only kept for "sportfish", suckers are classified as "baitfish". I love catching them, always wondered if they taste good just haven't dared to try. Let us know how it tastes!

My grandmother use to can them with tomatos. Damn they were good eating. Wish I would have got her recipe for it.

From few sucker species I tried smoking I can tell that longnose suckers are the best and taste great, Red horses are good and white suckers are not worth keeping or trying unless you know that secret of canning them.
