I'm sure there's at least a couple of you out there that have some good recipes for Antelope. I've never eaten it before, or cooked it(obviously).
Any special marinades?

Hey Swamp_Donkey,
If you have it in steaks on the BBQ, some Montreal Steak Spice and when almost cooked the way you like your meat, take a piece of butter and melt it ot top.
YUMMY!
That's how I eat it!

Pound it into a minute steak with a meat hammer...coat it with roasted butter and garlic flavored Fish Crisp,and fry quickly in a bit of oil. You'll love it.

So this is what I did,
One strip loin marinated with kraft "Balsamic vinegrette" salad dressing(freakin awesome)
The other I did with a little olive oil, onion salt, montreal steak spice, and some port. I wouldnt do the port again. But it was all very tasty
Damn its 3am and I'm hungry!!!

I make schnitzel out of venison and antelope back strap, Cut 1/2 " pound it out to 1/4" , dust in flour, dip in egg then coat with breadcrumbs and parmigan cheese and fry in olive oil.
