Are you getting surges of fluid coming out of the rad ? Grab a pressure tester and you probably have a blown head gasket pressurizing the coolant. Would not be the first Polaris that blew the water pump and then had the conditions you describe from the blown head gasket.

My diesel has a bleed valve at the high point of the rad hose right where it goes into the top of the block. I had to idle it for several minutes with that valve cracked to get all the air out. I have no idea if the 700 is setup the same way.

Give me a minute I'll get you a picture.

It would run fine until under load then as it got hot the air void would steam and blow coolant out the recovery tank cap. Hasn't given any problems since the air was removed. It seems to be a common problem with rangers.

A head gasket is also a possibility. The early 700s were notorious for blowing head gaskets, in the quads. Not sure about the rangers.

Good luck.

If you see bubbles in your plastic coolant reservoir, it is a good chance the head gasket is gone.

I had this issue with my Can Am recently. I hope yours is not a head. Try replacing your rad cap. Mine was stuck and would not allow coolant into or out of the overfill tank. Try running it with the cap turned to the loose position. This will ensure coolant flow. If it works replace the cap.
