Decided to try something different
Built a small hut and Alder Smoked/Dryed some Northern Pike

Turned out very well.
No Brine, No Salt, No spices at all, just Smoke and Air. Took 3 days to dry.

That`s the way the Indians up Northern B.C. do it with salmon.They dip it in Oolican grease though, for flavor.That crap is horrible but it makes great flavouring for your icefishing bait.

I have had dried moose meat that had been dried by natives. To me it kind of tasted like eating a cardboard box. No actually I think a cardboard box would taste better.

Dried moose over a slow smokey fire is great. Use dead/dry poplar, cut moose in long thin strips . Takes some time but is a simple jerky that I have come to love. Even better If u have the luxury of salt and butter at the time you eat the finished product.

Had lots of moose done this way....aquired taste. Lotsa butter. Ft vermillion special.

Rendered down oily little fish like a herring.You can smell it for a mile.It would make killer bear atractant.
