Once caught an atlantic salmon, killed and cleaned it. The heart continued to beat for at least a half hour. We had the heart in our hand and would dip it in water and it would pump water, pull it out of the water and it would squirt water nearly 2 feet.

I hate when I've killed a fish and cleaned it and the nerves make it flop around. Usually happens with trout but one time I was half done filleting my pike and it swam off into the weeds. Damn thing went so deep in the weeds it took me half an hour to find!
