I cook mine in a coating of Corn flake crumbs and a bit of Lawry's salt:test:

I put Corn flake crumbs and Lawry's salt in a plastic bag and shake-up

then I add the moist Lake Whitefish fillets in bag and shake

Into the buttered fry pan

MMM good if lightly browned:47b20s0:

The only lake whitefish I ever ate were from Kowaki Lake NE of Brooks, they came from a commercial fisher in late winter under ice, but they were really fishy tasting. I hated them. Are they all like that? They didn't taste like algae or muck, just like fish slime.

What's the trick to preparing them so they are palatable? Or do they have to be smoked?

When fileting them make sure you cut out all the fat (they have lines of fat near the top of the back you want to cut out as well as some fat around the belly). You want to remove the bones - both rib and pin bones (pin bones very similar to removing the Ys in pike). After skinning, and definitely skin them, flip them to skin side and with a very sharp filet knife take the brown fat off the filet that runs down the lateral line. If you remove the excess fat and the bones as described they become a really mild flavoured fish that works great in a variety of ways.
