This has probably been asked before but I'm curious about a couple of the birds below. Any recipies may be welcomed especially (In my opinion) for Spruce Grouse.

My fav is ruffie, but I like spruce grouse too, I like them best fresh, take the breasts off, soak them in salt water for an hour or two, then onto the bbq with a little salt and pepper and some bbq sauce...

For roast sprucie, if you want to tame the flavour down a little soak them in a bowl of milk in the fridge overnight, then roast them the next day.

I like huns soaked in Italian dressing for a few hours then BBQ, no sauce required. Been so long sice I have seen a ruffie to shoot at I can't remember what they taste like, guess I am doin too much hun hunting down south.FS

Ruffy followed by spruce. We soak our birds overnight in a salt water vinegar solution then debone them. We then cover them with a flour/seasoning coating and fry them up. Sometimes we use the frying pan that has a bit of bacon grease left in it to fry them in. Man is that good.

I actually preferred the spruce over the ruffies we shot this year. I just pan fried them with a little oil and salt. Really good. I understand sprucies taste a lot worse the farther Noth you go though. I got mine all in WMU 400 and 402 so they were good. mmmmmmmmmm.

I enjoy ringnecks most followed by hungarians.I no longer bother shooting spruce grouse ,because I am not keen on the taste.

I would bet that more hunters shoot and eat more ruffies than any other upland bird, because they are more abundant and avalible.

If someone has never eaten one of the other choices how can they really say that Ruffy is their "favorite".

I have eaten them all (as well as ptarmigan) and at one time I would have said a nice stuffed and roasted pheasant was best. But I haven't had that for a long time and like many I eat a fair number of ruffies each year. It is hard to beat and I guess at present its my favorite.

I voted for spruce grouse...especially those older ones after they've been on the needles for awhile. mmmmmmm tasty

Kinda like buckleys mixture, excellent when you have a cold.

I'll second that Blakenator - a nice feed of old spruce grouse is almost as good as a meal of mud-hens shot off the sewage lagoon. Yummmmm

I slow roasted a pheasant surrounded by a half dozen Huns in Moose Jaw for a wild game supper. Different stuffing in each. Everyone enjoyed and liked it. How can one go wrong. Ruffies in a camp setting. MMm. Hard to vote. I'll post another recipe for roasts.

Nothing better then a thanksgiving dinner of pheasent and stuffed hun's,then ruffie's and sharptail's next.........ruffies make the best hotleg's you'll ever cook,and ptarmigan is way over looked,excellent bird too just not dependable every year to show during the hunting season.

What is your favorite upland gamebird.

This one is easy. Pheasant is by far the best. I only got one last season, but it was excellent. Far better than chicken or Partridge, a distant second. Since I only shoot Huns and Ring-necks mostly, I cannot say much about other birds. I have had ducks and geese as well, and I dislike the taste of the darker meat, so I tend to avoid harvesting waterfowl.

I'm not too fond of roast duck either... but try them cut up into strips and done in a stir-fry. They're pretty tasty Chinese style.

my favorite? 1000% ruffy, cant beat it fried in butter and flavored with pepper (or sometimes the spice spike, try it!!). Especially when they are fried in the camper in the evening after a long days hunt;)

Ruffies are almost a staple in my camp we even make chicken fingers, and the chicken fahitas Mmmmm so good.

Without a doubt ruffies , at a fishing camp , stuffed

and cooked all day in a groundhole with campfire coals

As long as the bears are kept to a minimum

Bobwhite Quail and then Pheasant. Hard to beat fried quail, mash potatoes w/bisquits and gravy. And then there's pheasant and dumplings.

My favorite is pheasant than ruffy than spruce. There all good but perfer the taste of pheasant . I like to just fry them with butter and spices.

Do you mean prairie chickens or farm chickens? I've never tried pheasant (true story) so I can't comment on those big buggers.

I did some ruffie breasts in a dill and stump mushroom cream sauce at my sister's over Christmas. Flambe-ed with a shot of good old Alberta rye. I have to admit the flames got a little out of hand.

My fave is ptarmigan but early season sruce is a close second. I soak in milk overnight unless I'm really hungry. Fry in butter and oil with Montreal Steak and garlic salt.

I tried a wild rice and mushroom casserole using the unbreasted keel and it was awesome. Stuffed a peach in each. Kinda weird combo but it worked.

I dredge the legs in flour and garlic salt then fry and i have to fight off the kids with a big fork.

You did what to the rye?? Lit it up?? A tragedy has occured for Rye was intended to soothe the throat. At least it wasn't Crown. :) haha.

That does sound tempting though... the grouse recipe I mean.
