Brisket going on the Pit Boss at Midnight for 2pm lunch tomorrow.

Likely going to a Santa Maria Rub.

But will certainly entertain any proven winner Rub recipes:sHa_shakeshout:

I have done lots of briskets and my rub is very simple. kosher salt, brown sugar,paprika, garlic, onion powder,fresh pepper and dark roast coffee. amounts are dependent on my mood!:)

For my rub I use, 3 parts brown sugar, 3 parts coarse salt, 2 parts paprika, 1 part cayenne and 1 part cumin.

Local bbq joint here does kosher salt and garlic nothing else. Hands down in the top 3 briskets I’ve ever had!

Pup needed a trip outside to relieve her bladder. So from a deep sleep to standing outside in the ice fog in a few minutes window.Took the pup back up, grabbed a cold beer and refilled the pellet hopper. Snuck a peek. It looks glorious.

But now-I am wide awake and popping Popcorn:sHa_shakeshout:

Hit the stall and wrapped butcher paper and foil after a glace de viande brushing.
