View Full Version : A Tasty Day in the Kitchen
The older I get, the more important my Ukrainian/Polish ethnicity has become to me. Today, I got off my arse and made my very first batch of pyrohy (pierogi). I enjoyed the process, thought much of my Baba whom I named my daughter after, and gave thanks for all the sacrifices that strong woman made for our family. I made both cottage & dill, and sauerkraut with carrot, boiled, fried, and topped with bacon and onions, and sour cream. On Christmas dinner, I will make a mushroom sauce for them. Smachno!

Filled and sealed many a perogy when I was a kid helping my Grandma. They were the best of course, but those look pretty damn good too!!

I don’t think I will use the jig next time. Doesn’t really save much time I don’t think. A tad fussy.

SNS, how does that perogie rig work? Where did you get it?
They look fantastic by the way.Roll one sheet. Lay it over the jig. Fill pockets with your filling. Roll a second sheet. Lay in top. Roll your pin back and forth and the dough pinches the lip around the border of the perogy opening, theoretically creating a seal. I find you still have to pinch the edges, and a bit of air gets caught when you lay the second sheet on top. Will be going to a simple glass to cut dough next time.

Looks great ....those look fantastic. The cabbage ones look amazing.
Ironically I was craving sour cabbage myself and my Mom just came from Calgary tonight to spend Christmas with us and brought some Cabbage rolls for Christmas eve dinner tomorrow - I can't wait.
Nothing like food from the old country. Great Job.

At our wedding reception just before blessing of the meal I had the servers bring out a large bowl of perogies and put it in front of the wife, should have seen her smile. She still laughs to this day about that memory.

Expensive ( but saved 280 bucks on sale) but should last a long time and get great use. Pizzas next week and cinnamon rolls for a next day treat are in order.
