Anyone got any good deer sausage recipes they'd like to share?

Going to try making my own sausage this year. It's been awhile but I still have most of the gear. I'm off to Halford's tomorrow for a few more things.

Do any of you guys use the Dakota Water Sausage Stuffer (8lbs).
How does it work, are you pleased with it. If not what kind of a stuffer would you reccommend?

A buddy from airdrie has one and he loves it says it is the easiest stuffer to work. I ordered mine yesterday and should be here in the next couple days

Tuc, I have a 15 lb. sausage press made by the Hutterites from the Reward, Sask. colony. It is made of clear lexan and hooks up to your water system for the pressure. It is the "rooster for Dolly". If you have the capacity to build one, it is quite simple. PM me, if you want pictures.

I have the water stuffer that I used several times but ended up going to a 15lb vertical stuffer from Northern tools out of the US. http://www.northerntool.com/webapp/wcs/stores/servlet/product_6970_200333527_200333527 It was a good deal and the gearing is made of solid iron rather than plastic. This unit is heavy duty (like 35 lbs) and a great deal for what you get. By far the best deal I could find anywhere. Just used it tonight in fact for a batch of pepperoni and cheese smokies. Has a removable cylinder and plunger so its super easy to clean and fill. You'll read that the gears on any stuffer except the water one are the weak point so look for metal if you go that route.

If you do want the water stuffer I have mine thats had about 10 runs through it that I'll sell for $100. PM if interested.

Wow that is a great deal on the vertical stuffer. Comparable stuffer in Halfords is almost $900.00.

I was suspicious because of the price but I have it and have used it and its SOLID. If you have the option I'd order a small diameter pepperoni stick tube at the same time. It only came with standard sizes and the flange size is different than the units Halfords etc carry. I ended up having to modify an 18 mm tube as I didn't want to bother ordering just a single tube.

Just pulled the receipt. I paid 199 plus 12.11 taxes and 42.15 for shipping and handling.

I just whipped up a 5 pound batch and gave it the fry test...WOW....even the wife liked it...never took any pics as I dropped my digital camera and am in search of a new one.

Anyway,here is the recipe if anyone wants to give er a go...

3 lbs lean ground..moose, elk, deer etc..
2 lbs Bulk bacon end trimmings, 5 pound box from the grocery store
1 TB salt
1 TB sage
1.5 tsp Nutmeg
1.5 tsp Thyme
1.5 tsp White Pepper
.5 tsp Ginger
1 cup Ice Water

I used the 3/16 plate to grind the bacon, the moose was previously ground with the same

Mix all spices in with the water then add to meat/bacon mixture.
Place in covered container overnight(plastic) letting the flavours meld.
Stuff into casings or you can form into patties.
I gradually added the salt until I got it to where I liked it. The bacon contains alot of salt so not much extra was needed

Try her out and let me know what ya think. This is as close as I have ever came, with a wild game breakfast sausage.

Thanks for the heads up about Northern tool. Looks to some good prices, out of curiosity I added a bunch of stuff to a shopping cart to see the shipping costs. It is way cheaper to order every thing at once, you save a tonne on shipping that way.

Tried this and it is excellent if you like Italian sausage.
Everyone that's tried it wanted more....
This recipe calls for just pork,which is what I did but next time I'll cut in some deer too at say maybe a 80/20 pork to deer ratio.I don't think you want to use too much deer but I'm gonna experiment!:D

If you are going to Halfords get their beer sausage seasoning its $7.50 i think and will do 25 lbs. and I find is very delicious. Piker
