scale and gut the fish, head can be on or off, up to you, salt pepper and garlic the inside and out, and put 2-4 leaves of sage inside the fisg, then wrap it in prosciutto and place on the bbq at med low heat for 5min a side, then crank it up a touch to crisp the prosciutto, its awesome, if one could figure out a way to debone the trout while its still all together it would be even better, but rainbows are usually quite easy to pull the bones out after they are cooked.

Enjoy

Let me know how you like it.

First of all good to see you around , Secondly I bet that 10 second perch method would work on trout . Cut on ither side of the back bone pull the meat back cut the guts out and cut the tail off youd be game to go .

trout already have thier own quick and easy method

and after thats done and if u want the skin off,ram a fork into the spine behind the head inside and snap the neck and pull the head to the tail. the skin will peel right off like a perch.

that looks tastey. I have not seen it done like that before. im going to have to try it:)

That second video is awesome! Thanks for posting it. Once you get the skin peeled off would you just go ahead and fillet as normal trying to get rid of as many bones as you can?

I hope to be trying out this method next weekend. Ive never seen this practice of cutting between the gills and mouth before, looks to work excellent.

This way of skinning brook trout does not work so good. Must be better with rainbows.

i kind of like to keep the skin on my trout, so i "butterfly fillet" mine, u having to gut them out then u basically fillet from the inside and work your way thru... should work for getting some bones out on that recipe
