This video is very good. I have an electric to get the fillet off the fish then use a regular knife to get the skin and bones out, I have even got the wife to eat pike now that I have learnt how too do this. I do however have to watch the video at least 3-4 times a year to keep my technique right.

The 5 fillet method is not the best IMHO

I usually run a very sharp knife along the top edge of the Y bones. Cut straight down until the knife tip hits the bones and then scallop the cut out towards the ends, but not through the top of the fillet. Once you have done this, go back to the other side of the line that naturally splits the fillet and angle about 20-30 degrees through the fillet to the underside of the Y-bone angling up until you cut through a the tips. It is best to get the front free and then hold onto the strip as you carefully work the meat off the bones. It is easier to show you than tell you. Practice makes perfect.

I really do not like this method. I found it was way too many cuts to get the bones out. After that we still had a few in there. I like the 2 fillet method. And that guy left a lot of meat on the fish. Whats with that big section he left on? In my experiences I don't recall any bones there. seemed like a waste.
