Do anyone have a good recipe for goose jerky or sausage?
Maybe I'm better off to buy a prepackaged mix and go from there?

Doug ever since I had found out how great a job Tofield packers does at making goose jerky, thats when I stopped trying to do it myself. That said when I was using my Little chief alot I had tried all of the fancy brinds that came with the smoker. But the one I kept coming back to was the basic brine with a cup salt, a cup of sugar in I think was a quart of water. I could never get my meat sliced a thin as a butcher does. FS

I use the prepackeged stuff from either Halford or CTR in Calgary, simple fast and AWESOME end product.
I use a Bradley.

Halford in calgary have all the fixins and very helpful people ...
The breakfast mix is the best ..
On anothe note , I just got 7dz silo decoys
Looking for someone out of calgary to do some
goose shooting with W101.

Thanks guys- you reinforced what I was already thinking. It would be easier to have some built, but that would be no challenge.
What I'll do is try a few different recipes from halfords, ctm or atlas. Also try some on my own.
I'll post when my results later this fall in case anyone is interested.
On a side note, we roasted a specklebelly goose for supper the other night- it was excellent.
