Ok guys, a few questions. Who smokes their waterfowl for jerky and sausage? If so, what kind, where'd ya get it and why? I've got a couple models picked out, but personal feedback is always nice. Thx!

Wife uses a dehydrator for our Jerky and it does a good job. American Harvest and you can add trays or take away accordingly. She puts it on late at night and takes them out in the AM. About 7-8 hrs or so. We like our sausage fresh so can't help you on smoking sausage. Congrats on the wedding and now those ducks and geese aren't safe again.

LOL, I have one of these and it awesome. I have done 14lbs turkeys in and have done as small as deviled eggs and a few things in between.

I do ALL of my geese into jerky.

Need more info let me know.

I have had my smoker for 2 years, and i have not used it for waterfowl yet, but i have made many batches of moose and bear jerky, and i find it easy to use once you get your recipe figured out. (the recipe part, and how many flavor biscuits to use ) was the hardest for me, but after a few trial runs it works for me.

Oh yes, deviled eggs....


Boil them, peel em and cold smoke em for 20 minutes (they look like golden eggs when done) then cut them in half and devil them... OMG are the good.

Bradley is the way to go.

If you ever get down to the states, there's a big grocery store type place that sells one just as good for $99.

I usually do a dozen eggs if we are having people over. They are GREAT for appetizers as well as good conversation piece...

The Bradley is THE BEST! In hindsight, I probably would have sprung for the one with the digital temp comtrol. Set it and forget it...

Do you guys just breast the geese out and cut the breasts into thin strips or do you grind up the meat and make the jerkey that way?

I have 3 smokers and the one with digital control of time and temperature gets my vote. I have ruined some sausage due to "snoozing on the job " and temperature being to hot...for to long...

Well all this talk about smokers, and i just had to do up a batch of moose jerky this afternoon.
