Salt, nitrates(in morton's salt) and whatever is in the smoke all are linked to bad thinks hapening.
But a life without smoked meat/fish just is not worth living.
But here is the balancing act without preservatives food poisoning becomes a problem and peope die anyway. I up side of doing it yourself is you can get away with cutting down the salt and such an keep up food safety other ways.

Smoked foods contain cancer-causing substances called polycyclic aromatic hydrocarbons (PAHs). The more smoke used, the greater the buildup of PAHs. Yet recent studies examined PAHs in smoked fish, shellfish, charbroiled meats, and cured meats, and the results revealed very low levels that do not pose any long-term health risk.
Thats just what i read.

Hmmm, A cronic chain smoker and Alcholic once told me whats the difference, he 'll be sick when he dies and I'll be healthy when I die.
so the ultimate conclusion is we both die.

use more sugar and less salt than the brine calls for. also wipe the film off or rinse the fish after brining. this should at least give you a few extra years before the cancer kicks in with less salt but will add a pound or 2 to the waist.

I ate smoked salmon every day for 1 year, gained many inches. However, two seperate family friends who were crazy about their smoked fish both died of pancreatic cancer. These guys both ate 20 day/years of smoked fish,, where you and I would eat meat & potatoes they'd eat meat & potatoes & smoked fish.

Mmmmmmm . . . bacon.
We eat a lot of bacon in my house, in addition to smoked ham and sausage. It is pretty safe to say that we're really pushing the limits of what our bodies can tolerate. It is the method of preparation (smoking) that can be dangerous . . . the species being smoked doesn't matter.
I know the modern "trend" is to disregard the data. "What doesn't cause cancer nowadays?" (this is not directed at you, Ghostguy6, as I've said this as well).
There are a lot of foods that don't cause cancer: some are even proven to prevent cancer. Many of these things are leafy, however, and man can not live on kale (or oranges) alone (especially BBJ, who is "allergic" to anything green ;))! :lol:
The key is moderation. I'm not very good at that.

Well, its better than bacon, ham , lunchmeats, smokies, hotdogs, wieners, sausages......in the fact the fish has good fats-omega-3's etc. If you go for smoked fish, dont do it 3 times a day!....other than that, enjoy the odd smoked fish. your grilled/boiled hotdogs, etc would be worse!
enjoy with a healthy salad, lol! and you'll be fine. just google smoked meat risks.
if you have a ton of smoked fish...just share. :)

Followed by diabetes and heart disease accompanied by stroke and heart attack! Yeah pretty much everything will kill ya now a days.

I don't think you are suppossed to put your head in the smoker during operation. Sorry couldn't resist. Enjoy your smoked fish. mmmmmmm good.
