View Full Version : First Pheasant - actually 2

Went out with a friend with his new 9 month old britany. My first ever pheasant hunt. Good learning experience for me and the dog. He only messed up once and we messed up once, but we brought back the limit (2 hunters).

So now what should I do? Do the same as partridge and stand on the wings and pull or should I pluck them? Soak in salt water? How do you guys cook them, I'm thinking of roasting.

Sherry fried Pheasant
2 pheasants
2 eggs, beaten
1 cup fine cracker crumbs (ritz crackers are the ****)
1 tsp. salt
1/2 tsp. pepper
1/4 cup butter
1 1/2 cups cereal cream
1/2 cup sherry

1. Cut meat into serving pieces, wash thoroughly and pat dry.
2. Melt butter in a heavy skillet.
3. Dip pheasant pieces in beaten egg, then in crumbs and saute in butter until golden brown.
4. When all the pheasant pieces have been browned, add the seasonings and cream to the pan drippings and stir until smooth.
5. Add the pheasant, cover and simmer over low heat until tender, stirring occasionally.
6. Just before serving, pour the sherry over the pheasant, bring to boil and serve hot.

I actually use this pheasant recipe to cook ruffies. As far as cleaning them, pulling the legs probably wont work cause they are a more solid bird but you could try it.

I wet plucked one and pulled the legs on other and I'll see how they cook.
