Bought a Bradley smoker last week !!
A buddy caught 4 RB trout today and asked me to try smoking them for him .
Anyone got a good recipes ???

try out the bradley smoker forum, lots of good stuff on there, dont go there if your trying to lose weight though

Do you like to eat them like cooked fish or like jerky?

Heres a simple recipe. Works great for white fish and rainbows/brookies.

Rub on soya sauce, enough to cover fillet.
Rub in brown sugar, cover fillet.
Then lots of salt.
Lemon Pepper.
Pepper.
Garlic salt.
All Spice.

Put in fridge overnight.

Smoke at 200 degrees for 30-45 minutes or until it starts to flake and is white. This isn't one for over cooking like jerky. Best smoked with black diamond willow.

I smoke trout every year. Have done every recipe out there but by far the best is to let this combination marinate over night. You need to heat it up on the stove then let it cool before pouring over the fish.

4 cups water
2 tbsp Black Pepper
2 Tbsp honey
2 Tbsp Maple Syrup
1 Tbsp Mustard Seed

Then you need to pat each filet dry. Heat the smoker up hot and then put fillets in until they turn color. Do not let the smoke and heat "cook" the fish, it will just get dry.

We just smoked 30 trout, a few pike and perch on sunday! the trout are great, pike taste kinda muddy (caught in the summer) and the perch are like rubber. I will post the recipe in the next day or two, gotta get it from dad. We use birch for smoking fish and willow for Jerky, seems to be more flavor.
