Excellent eating especially for somone who has never had wild game. I shoot mine off wheat fields along Cirrigana hedge rows. So there is a very mild game taste. I like to cut into strips, bread them and deepfry for partridge fingers. They are also good shak'n bake, or BBQ.

To me the best tasting gamebird of all. I pluck them very carefully so as not to tear the skin, stuff them and cook like a chicken. Well worht the effort.

How do you BBQ them? I've heard they taste dry BBQed, and how do you do the fingers?

I cut the breasts into strips then do up a batter and dip them.

As for BBQ I drench in BBQ sauce over some hot coals.
