My butcher showed me a trick where you slid in your hand between the cape and the animal while stretching. When you get your hand to a point where it can't go in deeper, make a fist and continue. This works well on a dehydrated or leaner animal.

I have done three times now.... Works fast, clean, leaves that layer of tissue on the animal.
