On Canadain Sport Fishing he covered how to prepare sucker on one or two episodes. Below is a short excerpt of one of his shows covering it. I especially like it as it breaks down the fine bones that are left after filleting.

Personally the sucker I ate was not as firm as he says in his video here but was as good as some walleye I have had. That I imagine depends on the water body and temperature etc.)
