Go with 250's
I recently built a dozen new arrows and my setup is almost identical to yours, except my draw is a touch longer at 31". I was debating between 250 and 300 spine, ended up going with a 250 spine and the Victory Vap arrows. FOC is ~16%, same broadhead and insert weight as you, total weight 510 grains. Left the arrows uncut at 31" to help offset the stiffer spine a bit. I can always cut them down later on if needed.
I would recommend the 250 spine. You could always increase your insert weight if you are over-spined, plus a little higher FOC is nice.
