Although if i get an elk... i think im going to debone on sight and see how that goes. One thing i learned from a friend... is carry some emergency space blankets... to put quarters or deboned meat on. Keeps it clean. And they are cheeeeeeeap. Those silver thinga all folded up neat.

I hate havalons ....well I don't mind them for certain jobs I have used them for capeing and breasting birds but found they to dull way to quick when doing a serious job.
I'll let you try one of my D2 steel knives that I have sharpened to shaving sharp then you will appreciate a real knife!!!!
