Gray squirrels are classed as pest and non native, they are not protected in any way.
Red squirrels are classed as fur bearing and may only be taken by a licensed trapper, however, you could get a resident trappers license which would allow you to take Red Squirrel on private land.
I don't believe a trapper could sell you a raw pelt, but they could sell you a tanned pelt.
