For soup or fondue - basa (yes i know the raising/quality is bad) haha
For oven/bbq a tasty atlantic salmon with either tons of onions or maple syrup
Best sashimi i ever had was fresh Yellow tail as well, although a good red ahi tuna is hard to beat.
