I would think pouring some diesel on the carcass and lighting may help prevent spread. Read once that dead mangy coyotes will attract dogs and can get infected…. Not sure about other coyotes finding the carcass.
Don’t see why another coyote wouldn’t eat a dead coyote. Especially in the winter.
