Even putting the gun back in the same stock you often have to re-sight a little, unless the stock is glass bedded and you use the exact same torque settings. You can however see if you need to re-sight by bore sighting the rifle as is, then checking it against the alignment after you change stocks. You will pretty easily see if the alignment of scope to bore has changed.
