I've spent my whole life living with spruce trees, forest, yard, hedges.
You can cut them anyway you want and any time of year. You won't kill them.
They may look a bit "ugly" at first but won't take them long to replenish new shoots and branches.
Sounds like you'll need someone with a lift to get up there. Do NOT attempt this with ladder. I have visions of tops coming down on you, they are extremely heavy.
oh, and pine trees are the ones with the long needles.
