Mmmm.. poor mans salmon. Canned sucker is very good. It does require a canning process but worth it. i knew an older lady that canned suckers every year during the spring run. Tasted like canned salmon. The bones go soft in the canning process, like salmon, so no need to remove the bones from a fillet.

If you want to try frying, cut into steaks, leaving the skin on instead of filleting. When the fish is cooked the bones might be easier to remove.
