Absolutely critical. I also use water than has been through two big charcoal filters, you don't want to add 'taste'. I don't use a filter system either, makes wine taste like paper pulp. Just carefully rack it as called for during stages, final rack before it goes off for bulk aging, and it is polished. Happy to give any advice.
