I have shot a lot of upland (ruffed grouse, grey partridge and pheasants) with 3 dram 1 1/8 oz 7 1/2 trap loads in a 12 gauge. If you are doing mostly pheasants then I suggest that you use #6 and #5 is not a bad idea either.
I think that either shot size would work well for you but as you are carrying a S/S why not put a 7 1/2 load in your I/C barrel and a #6 in your MOD barrel?
