Tasted like a bighorn actually. Very sweet meat. Had a mild sheep flavour. We ate tons of it while we were there. I got him the first day out so we were in camp till my friend got his after the 4th day. It was amazing to watch the guides. They took every scrap of meat or eatable body part off that mountain including a lot of the bones for soup.
Back in camp they divided the meat up into piles and then played a game to see who got first pick out of the piles of meat that were made while butchering it. It made it fair and they all loved taking the meat home to their families. I doubt they got much at home
