Default Yet another Evans cherry thread

We planted some fruit trees this year and I just harvested the Evans cherries. There isn't enough for a pie, so I'm looking for ideas for a small batch of cherries (about 3 cups pits in).

I found this this thread where TC suggested a black forest cake. That has possibilities; and my birthday is coming up so I can make myself a birthday cake.

Any other suggestions?

Black Forest cake with a splash of rum in it for the win.

I really wish I could find a source for them, we are officially out. Very sad.

Cherry vodka? I make one every year for the past three years and it is absolutely delicious! Wife and friends love it! The process is simple.

We do similar, but with rum.

Yummy!

We just have to beat the corvids to the cherries. They seem to descend on our trees just at the right time.

Interesting… I was thinking using a brandy but wife said that I’m going crazy…
What kind of rum are you using?

Maybe something helpful here?

I know for a fact there are at least a couple of pick your own type places around GP within a reasonable driving distance, but I cannot recall the locations at the moment.

Cherries frozen and pitted, bit of ice, some sugar, bunch of vodka and a blender. Adult slurpees.

Default Kirsch

Authentic Black Forest cake is delicious. To be authentic you use the cherry liqueur Kirsch, not rum.

I've done this a couple times you end up with vinegar, dried cherries, and syrup. The dried cherries are delicious - everyone that has tried them has enjoyed them.

It may be authentic, but rum is my preference.

And a quick update...my wife was all over that link, went to one of the community orchard sites, and picked a bunch of raspberries, choke cherries, and....

I was checking my neighborhood’s trees and they don’t have red cherries as of today, may be one or two…

My buddy takes my drunken cherries that left after the cherry vodka is done and make absolutely delicious cake with them! I don’t know the exact recipe but he is using condensed milk and about 2 pounds of drunken cherries and some brandy too…. Yummy!

I was thinking about a Port Cherry reduction. I will have to see if there are enough cherries left after a black forest cake.

I remember your thread on that and it is definitely on the list once the trees start producing. Do you pit them first or that's the job for the guy who wants the drunken cherries?

That looks very interesting. What do you use the vinegar for?

No I don’t pit them at all. Buddy who bakes the cake has a little hand held machine to pit them. I told him not to miss any because I will be sending him my dentist bill, lol!

Cheesecake, or use butter tart shells for bite sized pies.

Holy crap man! I can’t believe they are so ready in GP, in my hood they are still solid green!
Now I saw they have haskaps in the link, go get those too! Super delicious berries. I harvested about 10 lb , that should last me till next year.
The currant is awesome too. And if you have patience and have a thick skin- get some sea buckthorn berries and just freeze them. They are the best if you have cold, just pour hot water and mush them and squeeze the juices and add some honey. You will thank me later!

We have more daylight hours here so things ripen sooner. Looks like it's a 6 gallon score so far.

And, gonna be honest, I didn't pick any. I stay home and watch dogs, wife has been picking. It's a system.

She did get some huskaps, not many, birds look like they did well.

I think you should make some Evans Cherry Grey Goose Vodka as per KGB. Sounds good.
