Default Curry Corn Fritters

Making up a batch of these for the opening day of fishing. Tells me summer is here.

15 oz creamed corn
2 eggs beaten
2 Tbsp melted butter
2 cups flour
2 tsp Baking Powder
1 tsp salt
1/2 tsp curry Powder

4-5 cups of oil for frying

Combine corn, eggs and butter.
Sift dry ingredients together and blend in corn mixture. Drop by spoonfuls into 375F oil. Fry approx 4 minutes, turning once to cook evenly. Drain well and toss in hot melted honey to coat.

If I even OWNED a deep fryer, I'd try them. They sound great!

I make them camping having a zip lock bag each of wet and dry ingredients ( made up at home)and mix them together thru the bag and put a old empty coffee can with oil on the cookstove. Cut a corner out of the bag and squeeze out the amount I need.

Spearing them with a willow switch to get them out of the oil
