Default The fish you crave most?

What's the one Alberta fish you've always wanted to catch on the fly. And if given the opportunity to go anywhere what would be the fish of choice on a fly? I've yet to catch a bull, but hope to get the chance this year. And I'd love to battle a big tarpon.

While I've already acheived this, the one fish I really wanted to catch was a golden trout.

Fresh mountain caught trout breaded in Coyote Brand and fried in a pound of butter over a open fire
