Definitely do the you tube cleaning lesson - given skinning a burb is a daunting experience the first time .......... that would be a great start.
You can prepare burbs in many ways but the best is well seasoned, battered and deep fried.

Here is a really good link to a Utube presentation of skinning and cooking. We cook our burbot like this guy does by boiling. But then we use butter and garlic to coat it with......Burbot is a firmer meat so its referred to as poor mans lobster. Very good IMO.

Listen, take your fillets, cube them, boil in salt water for 3.5 minutes, strain and drop in butter, mix it and eat. Best fish you will ever eat.

Cleaning is simple. One skins a Burb. What I do is cut through the skin all the way around, just behind the head. Only through the skin though. No need to cut through any flesh at this point.
Then I nail the head to a post or large board, then I grab the edge of the cut skin and pull it toward the tail, pealing the skin off like pulling off a tight sock.
Then gut and remove head and fins like I would with any other fish.
Then cut into fish steaks. No need to filet, Burbs don't have the fine bones that other fish have.
To cook, any fish recipe will do. My favourite is to fry the steaks in butter.

cleaning burbs
Clean like a normal fish. Round rib cage. Come out boneless. Skin normally. Did my first one... piece of cake

I do it the same way with the exception of I simply cut the back straps off once skinned. Great fish in my opinion.
