Bear pepperetts

Hi all, looking at making some bear pepperetts. Wondering if anyone here has made these. Looking for tips and tricks. I'd like to smoke them but wondering about different meats to mix it with. Also realize I need to cook them well internally to kill parasites. Any help or suggestions welcome! Demo
