Default Game Tagging Question

I am wondering for the people who hunt game that must pack it out, if you de-bone your animals in the field to make packing easier how do you tag the animal? I have a non trophy sheep tag this year and as a first time up how to deal with this situation. I realize that a ram must be tagged through the nostrils but on an animal with no "leg or tendon" if its de boned how do you deal with it? Also any suggestions on judging rams to see if they are legal?

My brother always keeps the hock section with the tag attached(as small of a piece as possible) and also keeps the evidence of sex attached via a small strip of skin running between the two. Its a total pain in the ass but should prove more than legal. I realize that wieght will be a major concern. My two cents.

With NT sheep, you really aren't talking a lot of weight and likely easier to keep one hind quarter intact but with larger critters, I've done as trible b suggests although with deer it's tricky as you also need the tail attached.
