Given the whirlwind of bad and worsening news of late, I decided it was past due to indulge one of my Lady's favorite food cravings...
Second last Russian Boar ham I had Pete's Mountain Meats (he does one hell of fine job!) turn into smoked hams for me.
Sirloin that is:
Sat on the counter most of the day defrosting:
An hour and half in the clay baker at 325 degrees - House now smelling WONDERFUL!
Choppy Whacky with juices running everywhere!
Loaded up with the other goodies:
And Romantic Dinner for Two:
Normally I take the leftovers and make split pea soup. After chowing down, the decision was made NOT with this one!
Superb flavor, melt-in-your-mouth consistency (no need for the knife at all) means this will be another meal unto it's own in the next couple of days...

Mozza Stuffed Meatballs
1 lb Ground Meat
1 egg
1/4 cup Panko
Season to preference. I used Italian Seasonings
1 oz scoop should give 19 scoops-same # as the mini-Bocconcini balls in the pac size I buy
Option #1-place cheese in centre of scooped meat and form up sides leaving top open. This is suitable for roasting and lets you place herbs and parmesan and a small knob of Garlic Butter on top of the cheese
Option #2 Continue forming to totally encase the cheese inside the meatball. Suitable for browning in a skillet and placing in a casserole on a bed of tomato sauce to be finished under cover in the oven. This is the route I went with.

Made a moose stew last in for supper in the slow cooker. Today I got 2 smaller moose roasts in the slow cooker for sandwich meat for work lunch this week and for supper tonight I have a moose tenderloin marinading and will wrap in BACON and put on the BBQ. Still need to slice up potatoes and onions to wrap in foil and place on the BBQ 👍🍻

Give the wife a break tonight and I made spaghetti and meat sauce with moose burger, topped with some freshly grated mozzarella cheese and some garlic toast made from the wife’s homemade bread. Sorry no pictures the kids gobbled it up almost as fast as I got it dished up onto their plates.

Yaaaaaaa. Eating my feelings
On Baby Watch for new Grandson. We were supposed to be there for the birth in Fort Mac, but got Co-Di-Verted.
So day 2 of induction comes to a close and I suspect they will C-section tomorrow to expedite the process and get the baby out of the Hospital before the Covid risks escalate. Baby is currently at 37 weeks.
Have a bun.
