Default Elk steak sauce recipe

A colleague of mine passed along this recipe to me. I'm glad she did - its awesome. Thought I'd share:

1 tsp butter
1 shallot or ½ small red onion, sliced very thin or diced
¼ c balsamic vinegar
1 c red wine
1 c beef stock
2 tbsp grainy mustard
¼-1/2 tsp ground pepper (to taste)

Sauté onion in butter until translucent. Add balsamic vinegar and simmer until reduced in volume by ½ (~3 minutes). Add wine, stock, mustard and pepper. Simmer until reduced in volume by ½ (~5-7 minutes). Serve on top of elk steak.
