Halibut for burgers! You should burn in hell for that, lol! You usually use far less desirable fish for that.
Get you fish minced( or use the meat grinder, food processor) add salt and pepper and a bit of a lemon zest, add bread crumbs, one or two eggs and an onion( also use the food processor or meat grinder for that).
Mix it all together rally well, make a patties and on a frying pan. Enjoy!

Fish Burger

1lb boneless Skinless fillets finely hand chopped
1 large Egg
3 Tblsp Panko Breadcrumbs
1 small shallot minced-or 2tsp Lipton Onion Soup Mix
1/2 fresh Jalapeno Pepper-seeded and finely chopped
2Tblsp Chopped Fresh Cilantro
3/4 Tsp Salt
Combine and form into 3 or 4 patties/cakes. Will be a bit slack so I often use a 4oz or 6 oz ice cream scoop directly into hot pan and flatten gently with a spatula or lifter

Heat 4 Tsp Olive Oil in medium non stick skillet over medium heat approx-4-5 minutes per side. Should be Golden Brown and cooked through.

Can be served in bun with Remoulade sauce or good sauceless with Spinach and fresh Basil and squeeze of lemon and placed on bottom Bun

Great with Halibut But generally I use Snapper

Whatever seasoning you use remember one thing - finely cube the fish by hand. The right texture is worth the effort.

Looks crazy delicious. I'm gonna add some lemongrass, fish sauce, touch of sugar, and Thai birds instead of jalapeno. I like it hot. Thanks for the great recipe.

LMAO for that and how true.
If and when you do make them be sure to not over work them. Fold to mix ingredients, lightly roll a ball and flatten. Nice and loose.
