I'm at priority 7 for Meriams. I knew that I'd be working this spring, and wouldn't have a chance to get out. I agree with you that turkeys are gorgeous, delicious too.
The turkeys are going to be my first "Grand Slam" if you will. I've looked into a number of outfitters in the US and Mexico and am saving up to get all of the subspecies in one year. My plan is to import the meat from each bird, breast meat at the very least. I'd like to put on a little turkey dinner with every variety of turkey on the table. Prepared in similar ways which will allow for the actual flavor of the bird to come through.
