Default Elk or deer steak tartare

Anyone here making steak tartare with their harvests? Have a couple nice elk tenderloins from the fall and I want to make steak tartare. Any good recipes to share?

Although I never know the exact amounts/weight/portions, these tend to be the ingredients I use;
- anchovies and/or capers
- Dijon mustard
- couple eggs
- red onion
- parsley
- olive oil
- some kinda hot sauce and Worcester sauce

I've only use uber fresh deer 'backstraps'. One of the first things I eat, along with the yummy offal such as heart, liver and kidneys.
