If they key is not chipped they open the door with the key and are gone.

Put a piece of paper over your VIN and this problem goes away.
I do believe that making the anti theft system as unique as possible is the best one can do to prevent theft or at least slow them down enough.
Where I live, people(?) just steal trucks to joyride them and then dump them on the way home. No consequences even if they get caught. As braindead as they are (often infused with meth) taking the starter relay out will likely prevent their screwdriver method to work and would just leave the truck behind.
Still, that's not a comfortable solution as I'd like to remote start it in the cold winter days.

I am waiting for princess auto to get in their fall stock of claymores.

It would be great for a bait truck.

or you could do this, just wire the airbag to the ignition lol

that sucks. Well when the windshield gets changed I guess it can be done.
I guess it's done to prevent tampering with the VIN tag.

Very likely. Or to sell more vehicles because showing the vin is a very easy way to get a key.
