I stand corrected J71D.
Bringing preserved foods to a boil for a few minutes SHOULD denature the toxin... I won't personally be taking that risk, nor exposing my family to such risk.
If any canned food isn't still under negative pressure, it goes in the toilet.

I've always eaten wild meat just ike I like my beef...RARE !
Since I left home anyways...mom and dad always cooked meat of any kind, especially wild, WELL done, lol....I'm still trying to cut a deer roast my dad cooked when I was eleven...and I'm in my 40's now...that's tough.

Marinade well and always used plenty of juniper berries in the marinade and inject, mmmmmm. Love those juniper berries for any wild meat

A simple search found the thread I wanted to read up on.
When I was 9, I remember walking into the taxidermy shop with my dad to pick up a head mount. The taxidermist brought us into the back where it smelled amazing. He was slow-cooking cougar. He cut us up a slab each and served in on a simple homemade bun with butter. Even though I was 9, that was the best meat I had ever tasted. I remember it to this day.
I'm currently eating some medium- med rare whitetail venison steak (this steak is off the rump) and the juiciness and tenderness and flavor is freakishly delicious. Bye bye - time to gobble gobble.

Cougar is a light coloured meat, mild tasting, tastes and looks much like an over cooked pork roast. It is quite dry and you unfortunately need to cook it to 170f.
I think it would make a good meal in a slow cooker...pulled cat??
It is surprisingly good. Sauce helps with the dryness.

It does differ with ungulates for sure. I’m not talking bear or cougar...
but it really depends how you wish to appreciate your cut of meat. Some steaks like a flat iron are best done med-rare. Others, skirt steak are great medium. Delmonico steaks are best blue-rare. Shanks are great when they’re pressure cooked/slow cooked to hell and back

In my BBQ storage unit, I have a couple of beat-up, old hockey pucks. When I'm cooking game, and someone insists on well-done, I give them a hockey puck, saying at the same time that I won't do that to game meat!
