Default Year old goose meat for Jerky

Hey Guys

I want to go out goose hunting but I have a tough time knowing I still have 40lbs of goose in the freezer. I was thinking about turning it all into jerky... does this sound like a bad idea after a year? Its not freezer burnt at all.
Have any of you done jerky with year old meat? And if so, did it taste grubby?

Default No concerns here...

I just used 2 year old goose to grind for burgers and taco meat. I cut off the freezer burnt sections and continued on. Goose grind is a staple in this house. We use it for a lot of things (especially since I never got a deer last year ).

I haven't made goose jerky in a while but when I did, teriyaki was a favorite in this house hold. I generally make the "Jerky Stick" style as the traditional jerky strips were a bit to tough for the kids. Run it through a grinder, push it through a jerky tube and smoke / dry. Good stuff!

I've never tried ground jerky actually. Might be a better option for this lot. I've always sliced and smoked it but its a ton of work for something that might taste old. Grinding seems like an easier way to go.

I would say it should be fine. Especially that there is no freezer burn on it. If it was freezer burnt I think you would be wasting your time. Goose jerky was always a favourite of mine but haven’t been out hunting for geese in about 5 years now.

Clarification.
Gift the meat, but be honest that it has some funk in it's trunk.
Perhaps they can feed their dog or teenage kids

Breast it and grind the meat

Add the same amount of ground turkey to it

Add 1/4 cup of garlic salt and 8 tablespoons of pepper for every 10 lbs of meat. Add 3 lbs blueberries for every 10 lbs meat

Mix it all together, make patties, and serve them as breakfast meat.

One year old is nothing, I'm still eating 3 and 4 year old moose that was properly wrapped. Just make sure to get rid of all the fat, even the tiny pieces. It takes a lot of detailed knife work but it's worth it in the end if you want to avoid any rancid fat taste.

I was given some goose pepperonis last year and they were good! I was given some goose jerky a few years back... I still remember the taste, couldn’t spit it out fast enough! Tasted like a dehydrated liver....

They did not make it very well then. I have both been given and made myself some goose jerky and I would choose it over beef anyday. Even the kids loved it.
